Ingredients

• 1 cup tender green thyme leaves (broad variety)
• 1 onion
• 1/4 teaspoons salt
• 1/4 cup olive oil
• Juice of half a lemon 
Preparation

• Wash the leaves well and squeeze out excess water.
• Chop the onion very finely and rub with salt.
• Add the lemon juice to the above mixture and stir in the leaves.
• Pour the oil over the leaves and serve.
Additional Notes
Its a good idea to have multiple pans going at one time to make the cook ... otherwise the 2 hours could turn into a half a day. :)
