Ingredients
• 2 bunches thyme (about 7oz on the stalk)
• 1 medium onion, very finely chopped
• 2 teaspoons sumac, or more to taste
• Salt to taste
• 4 tablespoons extra virgin olive oil
Preparation
• Strip the thyme leaves off their stalks, wash them in cold water and dry them.
• Put the thyme in a salad bowl, add the chopped onion, and sprinkle
with sumac and salt to taste, pour in the oil and toss together.
• Taste, adjust seasoning if necessary, and serve immediately.
• This salad is also a perfect accompaniment to roast lamb.
Additional Notes
Its a good idea to have multiple pans going at one time to make the cook ... otherwise the 2 hours could turn into a half a day. :)
