Ingredients
• 1 cup diced cucumber
• 1/2 lettuce ( Iceberg or Cos ) chopped
• 4 tomatoes diced
• 1/2 cup fresh mint chopped
• 1 cup flat leaf parsley chopped
• 1 onion finely chopped
• 1/4 cup diced radish ( optional )
• 1/2 cup lemon juice
• 3 tbs. olive oil
• 1 pitta bread cut into small pieces and toasted under the grill
Preparation
• When using fresh vegetables and herbs, make sure they are washed thoroughly and drained.
• Combine all the above ingredients in a deep dish, mix and serve as a starter or side dish.
Additional Notes
Its a good idea to have multiple pans going at one time to make the cook ... otherwise the 2 hours could turn into a half a day. :)
