Ingredients

• 1/4 cup medium cracked wheat
• 1 cup water
• 750g minced beef
• 1 small onion, finely chopped
• 1 clove garlic, crushed
• 1 tsp ground cumin
• 1/2 tsp ground cinnamon
• 1/4 cup pine nuts, finely chopped
• 1 egg, lightly beaten
• 6 pita breads, to serve 
Preparation

• Soak cracked wheat in water 30 minutes.
• Drain. Squeeze out excess liquid.
• Mix with other ingredients in a bowl.
• Divide mixture into 12 equal portions.
• Roll each portion into a sausage shape, insert a metal skewer lengthways through the middle of each.
• Place Koftas on a cold, lightly oiled grill.
• Cook under medium-high heat 8 minutes, turning regularly, until brown and cooked through.
• Serve in pita bread 
Additional Notes
Its a good idea to have multiple pans going at one time to make the cook ... otherwise the 2 hours could turn into a half a day. :)
