• 1 lb. lamb
• 1 tsp. salt
• 1/2 tsp pepper
• 1/2 cup finely chopped onions
• 1/4 cup chopped parsley
• 1 cup tomato juice or diluted tomato paste
Preparation
• Grind meat twice.
• Mix thoroughly with other ingredients.
• Butter a pie tin.
• Spread the meat on an oiled tin or baking pan.
• Cover with a layer of thickly sliced boiled potatoes topped with a layer of sliced tomatoes.
• Combine a cup of tomato juice with salt and pepper to taste and pour over the vegetables.
• Bake in a moderate oven until the meat is well cooked and the sauce has thickened like gravy.
Additional Notes
Its a good idea to have multiple pans going at one time to make the cook ... otherwise the 2 hours could turn into a half a day. :)
