Stuffed Cabbage Leaves or Cabbage Cigarettes (Malfouf Mehshi):

Ingredients
• 1 large head of cabbage
• 2 1/2 teaspoons salt
• 1 1/2 lb chopped lamb
• 1 cup cooked rice
• 1/2 teaspoon pepper
• 1/2 teaspoon allspice
• 1/2 teaspoon cinnamon
• 2 cups hot water
• 1 teaspoon salt
• Juice of 2 lemons
• 1 clove garlic, chopped
Preparation
• Wash the cabbage, drain, turn it upside down.
• Cut out the stem end and core.
• Put the cabbage in a large kettle, cover with boiling slated water,
and cook until the leaves are loose enough to separate with a fork (20
minutes).
• Remove the cabbage, drain and separate the leaves.
• Mix the lamb and rice with the pepper, allspice, and cinnamon.
• Place a small amount of the mixture on each cabbage leaf, and roll into a cylinder, tucking in the ends of the leaves.
• Place the stuffed leaves in layers in a large casserole.
• Add the hot water, salt, lemon juice, and garlic.
• Cover and cook on low heat for one hour.
Additional Notes
Its a good idea to have multiple pans going at one time to make the cook ... otherwise the 2 hours could turn into a half a day. :)
