• 1 kg (32 oz) green beans, string and snip off the ends, snip each bean into two and wash
• 1 kg (32 oz) tomatoes, washed, peeled and chopped
• 1 ½ cups finely chopped onion
• ½ cup olive oil or vegetable oil
• ½ tspn salt (as desired)
• a dash of ground allspice
• a dash of sugar
• 3 heads garlic, peeled
• 1 fresh green or red chili
• ½ cup water
Preparation
• Fry onion and garlic cloves in oil over high heat, stir for 5 minutes.
• Add beans, cook for 10 minutes, stir occasionally.
• Add tomato, salt, sugar, chili, allspice, and water.
• Cover. Bring to a boil.
• Cook over low heat for 35 minutes or till tender.
• Remove chili then serve cold with spring onions.
Additional Notes
Its a good idea to have multiple pans going at one time to make the cook ... otherwise the 2 hours could turn into a half a day. :)
