Ingredients
• 4 Tablespoons Olive Oil
• 1 Large Chicken in 8 Pieces
• 3 Large Onion sliced
• 1 Tablespoon Flour
• 6 Cups Chicken Stock
• 2 Teaspoons Salt
• 1/2 Teaspoon Pepper
• 1 Teaspoon Cumin
• 4 Lemons Lemon Juice
Preparation
• Saute onions and chicken in oil until well browned.
• Sprinkle with flour and allow the flour to darken.
• Add stock and stir well.
• Add salt, pepper and cumin and simmer for 1 hour.
• Remove from heat, add lemon juice and serve with rice.
Additional Notes
Its a good idea to have multiple pans going at one time to make the cook ... otherwise the 2 hours could turn into a half a day. :)
