To make marinade:
• Combine ingredients in a small bowl.
• Add chicken strips and marinate, covered with plastic wrap, in refrigerator several hours or overnight, turning occasionally.
• Drain chicken and reserve marinade.
• Heat olive oil in a medium pan; add chicken.
• Cook over medium-high heat 5-10 minutes or until lightly browned and tender; stir in reserved marinade.
• Serve chicken strips with Hummus, rolled in pita bread.
Additional Notes
Its a good idea to have multiple pans going at one time to make the cook ... otherwise the 2 hours could turn into a half a day. :)
